Enchiladas are becoming a specialty of mine, these were amazing.

Ingredients:

  • Red onion
  • Red beans (kidney beans)
  • Portebella mushroom
  • Spinach
  • Chilpolte pepper
  • Hot peppers
  • Chedder cheese
  • White corn tortillas

Sauce

  • Diced tomatoes
  • Garlic
  • Chili powder
  • Cumin
  • Cilantro
