This is the real deal, no Falafel mix, home made from all raw materials!!
Falafel: Chick peas, 2/3rds of a yellow onion, fresh parsley, two table spoons of tahini, two tea spoons spice mixture (from middle eastern market) & chick pea flower to thicken. – Food processed & formed into patties then fried in a generous amount of Oil.
Yogurt sauce: Crushed Garlic, Fresh Dill, diced cucumber, plain yogurt & salt – made first and set to marinate in it’s own flavors
Served in whole wheat Pita with Carrots, Avocado & Baby salad mix.
Seriously, this is Falafel on a whole new level from anything I’ve had previously…. Primo!!

Mmmmmmm, fresh falafel! Are the chickpeas soaked? that’s the way I’ve made it…hoping to grow enough fava beans this year to try making falafel from them
In this round I used caned chickpeas, but if using dried, they would need to soak overnight and then be boiled for an hour or so to soften them up. The frying process is very short 3 to 5 minutes so the chickpeas need to be cooked before hand (or just canned).
Your falafel looks great, but may suggest some “real deal” condiments for it?
Here is how it comes in Israel:
- hummus (goes on the pita itself for make it creamy
- chopped salad (tomato, cucumber, onion, maybe cilantro, salt, pepper, olive oil and lemon juice) – to provide the acidic counter strike to all the creaminess
- fries – yum!
- tahini – more flavor
this is the basic package, but then there are multiple salads and pickles available for you to add on. My personal favorite is chopped cabbage and dill salad and some salty pickles
